Colombia Monteblanco is coffee with a romantic vibe. Passion fruit, feijoa, rose jam, and hints of rosé wine — sounds like an unforgettable evening on a terrace somewhere in Barcelona, doesn’t it? This is a coffee experience that perfectly balances exotic character with refinement. The body is dense and rich, yet never heavy. The aftertaste is wine-like, warm, and lingering. It makes you want to pause your worries, deadlines, and thoughts — and switch to do not disturb until the very last sip.

This coffee comes from the Monteblanco farm, which quite literally floats in the clouds above the Huila region. Rodrigo Sanchez, the farm’s owner, is passionate about experimentation and masterfully blends tradition with science.

This particular lot was processed using the washed method with Carbonic Maceration fermentation. After depulping, the cherries are placed in CO₂-filled barrels for 70 hours. This creates an anaerobic environment where fermentation begins — this is where most of the fruity notes and the cup’s sweet, juicy character are born. Then follows another 70–94 hours of fermentation, but this time with the addition of the coffee’s own juice, rich in sugars and microorganisms. In total, up to 188 hours of fermentation intensify the winey-fruity notes, bright acidity, and rich structure.

Afterward comes meticulous washing, drying for up to 22 days, and vacuum packaging.

By the way, besides Monteblanco, Rodrigo also owns two more farms — La Loma and El Progreso — and the company Aromas del Sur. In 2017, he and his team built a cupping lab at La Loma to roast samples, evaluate harvests, and do sourcing directly on site. In 2017 and 2018, coffee from Monteblanco ranked among the top in the Yara Champion Program, and in 2019, it won the Roasters United competition.
